The Chinese Food in Sabah

The Chinese had settled in Sabah over past century and had contributed and influences much in Sabah prospect whether economy, socially and many others. Chinese observances and events like the moon Cake Fectival and Chinese New Year have brightened Sabah's festival.
The most significant of all is their cuisine. Walk any town in Sabah and you will see Chinese Restaurant everywhere. Even more nowdays, they are Halal Chinese Restaurant so all Malaysian can taste the Chinese style cooking. It's style of cooking consists of varieties of ingredients, few herbs and the ultimate Chinese brown gravy is the versatile flavouring (a mix of salt, soy sauce, sugar, pepper, cooking oil and lilltle cornflour).
Most significant component in the Chinese foods is in the details of preparation. Most foods are chopped into bit sizzed before flouring or cooking. Example, meat is sliced along the grain for slighty crunchier texture. The most popular method in Chinese cooking is stir frying. It is quick and seals all the savoury food juices. It is about 1000 years old method, quit new than Chinese steaming method.
The Chinese cooking also use the principle of harmony. Every aspect in the cooking is performed ritualistic manners, the taste incorporates the six basic flavours; sweet, sour, pungent, hot, salty and spicy. It is balanced through the choices of dishes. Texture is also important, even the stle of cooking is dryness but it must also attempt to compliment juiceness, softnes and smoothness to contrast agaisnt crispness. The harmonious balance between Yin and yang can be done through variety of ingredients cooked in different methods. Meaning, these dishes must include meat, poultry, seafood and vegetables. Another meaning is, steamed, stir fry, deep fry, braised and boiled.
